
Updated version of the keto protein bites but with carbs (gluten free old fashion whole oats).
I have just about perfected a wonderful low-carb, high protein, high fat, peanut butter bite. Keep them stored in the fridge and enjoy anytime. These are powerful satisfying bites that give you energy for hours.

Low-Carb Peanut Butter Protein Bites (With Ground Oats)
Low-carb, high fat, high protein, peanut butter bite. Perfect satiation and energy for hours.
Equipment
- 1 Large Mixing Bowl
- 1 microwave safe container for melting wet ingredients together
- 1 small muffin tin
- 25 small parchment liner cups for the muffin tin
- 1 large silicone mixing spoon
Ingredients
- 1/2 cup gluten-free whole oats grind to flour like consistency
- 3/4 cup natural creamy peanut butter (no sugar)
- 3 scoops Equip Foods Vanilla Beef Protein Powder Salted Carmel Flavor tastes great too
- 1/3 cup unsweetened coconut flakes
- 1 tbsp unsweetened vanilla extract
- 1 tsp Redmond Real Salt
- 2 tbsp PBfit classic peanut butter powder optional
- 5 tbsp virgin unprocessed coconut oil (melted) melt and combine with creamy peanut butter
- 2 tbsp unsweetened cocoa powder (optional) optional
Instructions
- Grind oats in food processor till flour like consistency, powder.
- Mix well all dry ingredients in large bowl. Ground oats, protein powder, coconut flakes, PBfit powder, salt, and cocoa powder (if desired).
- To microwave safe glass add creamy peanut butter, virgin coconut oil.
- Melt peanut butter and coconut oil, in microwave, for 30 seconds at a time. Till melted. Mix well every 30 seconds. Usually take about 45 seconds to get it all melted and mixed well.
- Mix vanilla extract to the peanut butter oil mixture.
- Pour oil mixture into the dry ingredients and mix well.
- Use small parchment liners to a small muffin tin, add about 1 tbsp to each liner. Makes about 20 bites. Put in fridge for about 45 minutes to cool and set up. Then you are ready to eat. Store in fridge in container of your choice.

Store refrigerated up to 1 week.
