GF Low Sugar Cornbread

This gluten free low sugar cornbread recipe is delicious. Not a low fat food. Not dairy free.

Ingredients
  

  • 1 1/3 cup cornmeal Go for Gluten Free Organic Variety
  • 3/4 cup gluten free all purpose flour
  • 2 tbsp coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/3 cup buttermilk
  • 2 each eggs, blended
  • 7 tbsp melted salted butter
  • 1 cup frozen organic corn kernels Find the best organic yellow or white corn, frozen

Other items needed…

  • 1 tbsp coconut oil firm and virgin is best for greasing the baking dish This is for the baking dish, to grease it with.

Instructions
 

  • Mix the wet ingredients together. The warm melted butter will clump up when it is mixed with the cold ingredients.
  • Mix well the dry ingredients.
  • Blend everything together by hand in a bowl and pour into the coconut oil greased baking dish.
  • Bake in 360 Fahrenheit degree oven for 45 minutes or so till golden brown edges and top.
